What is the best way to bread fried chicken so that it comes out crunchy?

I've tried breading chicken with flour and breadcrumbs but it never comes out as crunchy as I'd like it to. I've also experimented with crushed cornflakes, but those burn really easily. Was the oil just too hot or is there a better ingredient to use that wont burn while frying?
